font-family: arial, helvetica, sans-serif; margin-bottom: 0.5em; margin-top: 0.5em; text-align: justify;">Christmas is a time to get together with your family but it can also be a danger time for possible food poisoning.

Parliamentary Secretary for Health, Trish Worth, today launched some useful tips prepared by the Food Safety Information Council on how to avoid food poisoning over the Christmas period.

“Christmas can be a time of higher risk for food poisoning because the weather is hot, the fridge is overloaded and we’re cooking for more people than we’re used to. It all makes for perfect conditions for food poisoning bugs to multiply in our food and to make us sick,” Ms Worth said.

“However, following a few simple rules and using your common sense will help to ensure you enjoy the festive feast this year.

“Plan to leave enough time to defrost the turkey safely. A whole turkey is very big so it can be defrosted either in the fridge or on the benchtop. The important thing is to make sure that it’s fully defrosted before it’s cooked.

“Better still, ask your butcher or poultry supplier to defrost it for you in their cool room then bring it home and refrigerate it immediately.

“Storing the turkey, chicken or other meat in the fridge correctly also needs thought as it is big and will be competing for space with the drinks, desserts and all the other Christmas goodies. If it is going into the fridge before it’s cooked, it needs to be placed near the bottom of the fridge so that its juices can’t drip on to the ready to eat food such as salads, or placed into a leak proof container.”

Ms Worth said a Christmas ham would keep several weeks with proper handling. Once opened, remove it from its plastic wrap, cover with a clean cloth so it doesn't dry out, and follow any instructions on the packaging.

“Only slice as much as you will eat at the one sitting as the meat will keep longer unsliced. It should be stored in the fridge above and well away from any raw meat.

“Seafood should always be purchased from a reputable source, transported home in a cooler and quickly placed in the fridge,” Ms Worth said.

“And of course, make sure your hands and kitchen utensils are really clean and dry before you start preparing the meal.

“Taking these simple precautions can go a long way towards ensuring that your family and friends enjoy safe food at your home this Christmas.”

Christmas Food Facts

A traditional Christmas dinner in early England was the head of a pig prepared with mustard.

An old wives’ tale says that bread baked on Christmas Eve will never go mouldy.

At Christmas, Ukrainians prepare a traditional twelve-course meal. A family’s youngest child watches through the window for the evening star to appear, a signal that the feast can begin.

At lavish Christmas feasts in the Middle Ages, swans and peacocks were sometimes served “endored.” This meant the flesh was painted with saffron dissolved in melted butter. In addition to their painted flesh, endored birds were served wrapped in their own skin and feathers, which had been removed and set aside prior to roasting.

In Britain, eating mince pies at Christmas dates back to the 16th century. It is still believed that to eat a mince pie on each of the Twelve Days of Christmas will bring 12 happy months in the year to follow.

In Victorian England, turkeys were popular for Christmas dinners. Some of the birds were raised in Norfolk, and taken to market in London. To get them to London, the turkeys were supplied with boots made of sacking or leather. The turkeys were walked to market. The boots protected their feet from the frozen mud of the road. Boots were not used for geese: instead, their feet were protected with a covering of tar.

It is estimated that approximately 400,000 people become sick each year from eating tainted Christmas leftovers.

It was the custom to eat goose at Christmas until Henry VIII decided to tuck into a turkey. 93% of the population in the UK will eat turkey on Christmas Day; this means 11million turkeys being cooked!

Mince pies – You should eat mince pies in silence, and make a wish with each one.

The Christmas turkey first appeared on English tables in the 16th century, but didn’t immediately replace the traditional fare of goose, beef or boar’s head in the rich households.

Christmas Food Fayre at Port Sunlight

Take a turn around the snow-dusted Village and make your way into Port Sunlight’s very own winter wonderland this December 3rd & 4th at Hulme Hall. Irrespective of the religious zeal of the many different individuals that live in Italy the Christmas holidays are celebrated in full flow. Practicing and non-practicing Christians alike take the holiday as an excuse to indulge in some delicious treats that have been prepared for the day. Over the years the Italians have developed their own special cuisine for the biggest holiday of the year and it has become more or less formalized as authentic Italian Christmas food.

Although Christmas time is a time to prepare good food you will find there to be some variance in the kind of foods that is prepared in the different regions of Italy. Some areas of the country have developed a tradition of eating fish on the day. You may see some regions enjoy a Christmas Eve meatless meal whereas others enjoy the full fledged heavy meal on the big day itself.

Regional Christmas cuisine

Each region has its own formalized menu as mentioned earlier and it is interesting to note the differences that occur in regional food for the day. Amongst the most popular menus is the La Vigilia Napoletana which starts off with a spicy broccoli rabe and goes on to the main coarse which can be eel, lobster or the like. The meal is ended with lasagna and struffoli. Another Christmas Day menu for the Italians is the II Natale in Altamura. On this menu you will be starting off with fish such as baccala, eel and other seafood. This will then be followed up by orecciette, timballi and some roasts.

In Dalmatia you will find the people to be starting off with cabbage soup. The big bird turkey is consumed as the main item of the day which is accompanied with stuffed cabbage leaves commemorating the army that fought the Turks. Then you have the world famous Christmas food of Tuscany which starts off with crostini and cold cuts. This is followed up by cappelletti in broth and a boiled dinner consisting of roasted meats and other items. To end the feast you get a special treat of Panettone or Pandoro along with other pastries from the supermarket.

On a closer observation the Christmas food traditions of Italy reveal to be distinctively different from what you normally find in America and other European countries. There are a number of reasons for this difference starting out from the different races that have come in close contact with the Italians and had an influence on their cuisine. Some of the Christmas food is influenced by the regional structure of land and the availability of ingredients. For example the coastal areas are fond of preparing fish and different kinds of seafood. Mostly however you will find the Italians to be eating what they love to eat at the Christmas feast. If there is one thing that is common in all the different regions of Italy during Christmas Day it has to be coffee, which is usually consumed at the end of the meal.

Best Christmas Office Party Food

Christmas is a time for celebration both at home and at work. Parties usually take place every weekend from Thanksgiving through New Year's. Office parties, for the most part, take place during working hours. While some companies go all out and celebrate with a sit-down lunch or dinner, others offer a buffet in the boardroom or other meeting room, so workers can come and go as they please. Keeping the food safe to eat and tasty depends on the food and serving conditions.

Small Bites

Bite-size, appetizer-type food is less messy than food that requires a plate, knife and fork. That means no spilling the food on the office carpet and not having to worry about balancing a plate, drink and utensils. If the container is edible as well, so much the better. Try individual lettuce wraps, such as chicken or ham salad, wrapped in lettuce leaves. Tiny buns stuffed with ham and cheese or baby shrimps wrapped with bacon are easy to handle and eat. Try dip-sized corn chips dabbed with a 1/2 tsp. of spicy cheese. Use festive red and green garnishes for a holiday touch. Kale makes a ruffled green backdrop for food. Cut radishes into roses. Use overlapping rings of red sweet peppers.

Hot and Cold

Foods that must be kept cold should be placed on plates over a bowl of ice or served directly from the refrigerator. Hot foods won't necessarily spoil if they aren't kept hot, but they won't taste as good. Most offices don't have the facility to heat foods and keep them hot. If there's a kitchen at all, it most likely only includes a microwave and refrigerator. See the section on catering if you require more equipment.

Room Temperature

Select foods that will keep for several hours at room temperature and still taste good. A selection of cheeses and sausages fills the bill. Add crackers and a fruit platter. Vegetables and dip, if you keep the dip on ice, are dressed for the holidays, if you use only red and green vegetables. Try red peppers, cherry tomatoes, radicchio spears, celery and cucumber sticks, blanched string beans, snap peas and broccoli. Add a tablespoon of tomato juice to the dip to brighten it up. Sliders or bite-sized burgers are easy to eat and don't have to be kept hot. Omit the mayonnaise and serve with a spicy mustard or ketchup instead.
